a taste of the simple life

Posted by Picasa
I'm learning to enjoy the simple things. Last night I was left thoroughly satisfied by a grilled peanut butter and jelly sandwich. A little something I learned from my old friend Lauweta.

It's a pretty self-explanatory concoction, but I actually found this recipe on the internet when I was searching for a pic. So for those of you who want to experience a little taste of the simple life...

Grilled Peanut Butter & Jelly Sandwiches

It's hard to improve on a classic like peanut butter & jelly sandwiches, but I have really hit on something here. Grilled PB&J and a glass of milk -- that's one perfect, ooey-gooey sweet lunch.

What You Need:
Two pieces of bread
Peanut butter
Jam (jelly gets pretty runny but it works in a "jam")
Skillet or griddle
Butter or cooking spray
Spatula

How to make it:
Make a peanut butter and jelly sandwich, but don't cut it (keep it whole).
If you are using cooking spray, lightly coat the skillet.
Turn a stove burner onto medium heat. Place the skillet on the stove. You can let the skillet sit for a few seconds, but not for long.
If you are using butter instead of cooking spray, place a small slice of butter on the skillet and let it melt. Tilt the skillet a little so that the butter covers an area that is as big as your sandwich.
Carefully set the sandwich in the skillet. Let it sit long enough to brown the edges of the bottom side, checking the sandwich by lifting an edge gently with the spatula.
When one side is brown, flip the sandwich over and let the other side cook.
When the second side is brown, turn the heat off and use the spatula to take the sandwich off the skillet and put it on your plate. Careful, it's hot!
Slice the sandwich in half (notice how nice a diagonal cut looks). Pour yourself a glass of milk, and enjoy!

Calla Maria, that recipe makes me smile. The person who wrote it is very detail oriented. I've never had a grilled PB&J, but thanks to you, I think I'll try it soon. Miss you! Love ya, Erin

Okay, so in review: I should stir bread, PB and jelly in a cup. Turn the heat on high, pour 2 cups of motor oil (or some other slick compound) in the skillet, wait till it ignites or at least billows smoke, drip the PB sandwich into the skillet, flip it after 14 minutes, and feed it to my 3 year old son. Right?

*hug* I miss you! I'm sorry I've not been very good at keeping in touch. Very bad, actually. I'm not really even sure what's going on in your life right now. But I hope you're doing well and Portland is turning out to be what you hoped it'd be. And more. Love you!!
